We hope that you all had a great week and that nobody washed away in any of the flooding that various areas experienced this week.
Today we are once again bringing you some great, easy recipes to tickle your and your Child with Cancer’s taste-buds. Today’s post features Chicken, a Burger, a Smoothie and some lovely sweet treats, for what is life without something delectable and decadent?
Fruit Salad Smoothie
This is a very nutritional smoothie which the children will love, and it is an excellent way of a child who has difficulty in eating to enjoy a lovely chilled fruit salad on a hot summer’s day.
Yield: 2-3 Servings
- 2 apples
- 2 pears
- ½ stick celery
- 3 cm piece of cucumber
- 85 g baby spinach
- Small bunch of watercress
- ½ avocado
- 4 ice cubes
1 Juice the apples, pears, celery, cucumber, spinach and watercress.
2 Add the flesh of the avocado and ice cubes to the blender along with the juice.
3 Pour into a glass and serve.
Make sure all the ingredients are chilled before juicing and blending
These chicken meatballs are really popular with children and adults alike. Serve them on skewers, rolled in flat bread, pop them into lunch boxes or just eat them straight from the pan.
- 1 kg chicken mince
- 1 cup wholegrain breadcrumbs
- 2 eggs, lightly beaten
- 2 tsp cumin
- 2 tsp powdered chicken stock
- 2 cloves garlic
- 4 tbsp vegetable oil
1 Place the chicken mince, breadcrumbs, eggs, cumin, chicken stock and garlic into a large bowl.
2 Combine well using a metal spoon.
3 Roll tablespoons of this mixture into balls.
4 Heat the oil in a frying pan and fry the meatballs over a medium heat, turning constantly using an egg slice. These only take 3-5 minutes to cook through.
When cooking on the stove-top, just slice one of the meatballs in half to check they are white all the way through. Serve with tzatziki and Lebanese bread with a garden salad. They are very popular and are just as tasty hot or cold.
Cilantro-Lime Tuna Patties
Yield: 5 Patties
- 1/3 cup chopped fresh cilantro with stems removed
- Juice and zest from 1 lime
- 5 green onions, diced (white and green parts)
- 3 garlic cloves, minced
- 1 teaspoon dried ginger or 1 tablespoon fresh grated ginger
- 3 tablespoons low sodium soy sauce
- 1 tablespoon whole grain mustard
- 2 eggs
- 1/4 cup whole-grain bread crumbs
- 4 x 140 g cans of tuna packed in water, drained
- 5 whole grain hamburger buns
- Lettuce and tomato, optional for topping
1 In a large bowl, mix together cilantro, half of lime juice and zest, green onions, 3 of the garlic cloves, ginger, soy sauce, mustard, eggs and bread crumbs. Add tuna and mix well.
2 Form 5 patties and refrigerate for 30 minutes to set.
3 Spray a skillet with non-stick cooking spray and sauté the burgers on medium heat for 3-5 minutes on each side until lightly browned.
4 Serve on a toasted bun with lettuce and tomato (optional) and green beans on the side.
3-Ingredient Chocolate Cheesecake
You won’t believe that this cheesecake has only three ingredients. Prepare it the night before and you’ll have a decadent chocolate dessert that’s sure to impress children and adults alike.
- 150 g cream cheese
- 150 g dark chocolate
- 4 eggs, separated
1 Preheat oven to 160°C (140°C fan-forced). Grease and line the base of a 20 cm cake tin.
2 Place cream cheese and chocolate in a bowl over a saucepan of simmering water. Stir until just melted. Beat in egg yolks and set aside.
3 Meanwhile, beat egg-whites until soft peaks form. Gently fold through chocolate mixture. Pour into prepared tin.
4 Place cake tin in a larger baking pan. Pour in water so that it comes halfway up the side of the cake tin. Bake for 30 minutes.
5 Turn off the oven and leave for a further 15 minutes without opening the door. Remove from oven and allow to cool completely, then refrigerate overnight.
6 Run a knife around the cake to loosen it from the tin. Turn out onto a plate. Serve cake with double cream and fresh berries.
There is no sugar in this recipe. You could add some to the egg-whites if you prefer, or choose a semi-sweetened chocolate. Choose a cake tin that doesn’t have a loose bottom as this mixture will run out before setting.
Healthy Choc Pops
These cute little chocolate balls are made in the food processor with dates, nuts and coconut oil and, best of all, there’s absolutely no cooking involved!
- 1 cup nuts
- 15 dates
- 1/4 cup (45g) sultanas
- 1/4 to 1/2 cup cocoa
- 20 ml (1 tbsp) coconut oil
- 10 ml (2 tsp) water
1 Into a food processor add your nuts and process until crumbly.
2 Add your pitted dates and sultanas, process again.
3 Add cocoa and coconut oil, mix again and then add your water with as much as you need to bring it all together in a dough-like consistency.
4 Press into a small lined, lidded container and chill in the freezer for at least an hour.
5 Roll tablespoon-sized balls, insert some ice cream sticks and turn them into pops!
When adding the cocoa, be mindful that using too much can add bitterness. You can also need almond meal (flour) instead of almonds.
